Sev paratha

Hot parathas are everyone’s favorite ! Another common favorite is sev. Now imagine if these two favorites were combined – Sev Paratha !! Awesome !! This paratha has chat-pata taste. I used spicy long (Indore) sev in this recipe, you can use the sev that suits your needs. Its pretty quick to make. You could use the same stuffing in other ways like inside a chilli/mirchi etc.

Ingredients to make dough

  1. Whole wheat flour  –  two cups
  2. Salt  –  one-fourth tsp
  3. Oil  –  two tsp

Ingredients to make stuffing

  1. Long spicy sev  –  one cup
  2. Chaat masala  –  one tbsp
  3. Finely chopped onions  –  four tbsp
  4. Finely chopped coriander  –  two tbsp

Procedure to make dough

In a bowl, add all the ingredients and mix well. Now add little water at a time and knead until dough is soft. (approximately 5 mins). Cover it and keep it aside for 15 mins.

Procedure to make stuffing

In a mixer jar, add long sev and chaat masala. Grind  to a coarse powder. Transfer to a bowl, to this add onions , coriander leaves and one tsp of water. Mix well.

Procedure to make paratha

Make even, lemon sized balls and roll it into a small round using a rolling-pin. Use wheat flour for dusting.  In the middle of paratha put two tblsp of sev mixture. Close it.

Now roll it by dusting wheat flour. It will be little thick. Lay the paratha in a hot pan. Once you see bubbles on the surface, flip it over and wait for bubbles on this side. Smear little oil and flip. Fry until you see golden bubbles. Repeat the same thing to the other side of the paratha. You should see golden bubbles on both sides of paratha.
