Kathi roll / Frankie

I first tasted Frankie in Hyderabad long time ago. I loved it. It had become my favourite after-office snack item. I tried different variations then. Recently, I read in an article that Kathi Roll is very popular in Calcutta. It’s a good lunchbox-recipe during winters. Ideal for to-go / take-away snacks. Even though the list of ingredients is a bit long, the recipe takes short time.I prepare the dough first and then while its resting I cook the filling.

You can wrap the roll in a foil and avoid using plate (saves cleaning chore!)

Ingredients to make wrap

  1. Whole wheat flour  –  three-fourth cup
  2. All purpose flour  – three fourth cup
  3. Oil  –  two tsp
  4. Salt  –  a pinch
  5. Curd  –  two tbsp

Ingredients to make  salad

  1. Chopped cucumber  –  one cup
  2. Chopped onions  –  half cup
  3. Salt  –  to taste
  4. Pepper powder  –  one-fourth tsp
  5. Chat masala  –  one-fourth tsp
  6. Lime juice  –  half tsp

Ingredients to make stuffing / filling

  1. Grated potato  –  two and one-fourth cup
  2. Grated cauliflower  –  one-third cup
  3. Grated red bell pepper  –  half cup
  4. Green chilli and coriander paste  –  one tbsp ( i used two chilis and little coriander )
  5. Salt  –  to taste
  6. Oil  –  two tsp

Procedure to make wrap

In bowl, add all the ingredients and mix well. Now add little water at a time and knead until dough is soft. (approximately 5mins). Cover it and keep it aside for 15mins.

Make  rounds (even, lemon sized) and roll it using rolling-pin. Use wheat flour for dusting. Lay the roti in a hot pan. Once you see bubbles on the surface, flip it over and wait for bubbles on this side. Smear little oil and flip. Fry until you see golden bubbles. You should see golden bubbles on both sides of roti. Store in airtight container.

Procedure to make salad

Mix all the ingredients In a bowl and keep it aside.

Procedure to make stuffing

In a pan, add oil, grated potato, grated cauliflower, grated bell pepper, salt and green chilli paste.

 Mix well. Cook until all the vegetables are cooked on medium flame. Turn off stove.

Procedure to assemble kathi roll

Place the filling in the center of the wrap, on top add some salad. Wrap the kathi rolls tightly as shown on the photos.
