Corn soup

Nothing beats a nice hot soup in winter ! You can use many kinds of sides like bread sticks, crackers etc. The corn flour / starch with oats makes the soup thick. You can even add oats directly like vegetables. Don’t feel like spending too much time in the kitchen but want to cook something delicious and nutritious then this could be the answer.

  1. Finely chopped green beans  –  half cup
  2. Finely chopped carrot  –  half cup
  3. Corn kernals  –  half cup
  4. Water  –  three cups
  5. Finely chopped garlic  –  one tblsp
  6. Salt  –  to taste
  7. Pepper – half tsp
  8. Oats powder  –  three tblsp
  9. Corn flour / corn starch –  three tblsp
  10. Butter – one tsp


In a small bowl, add oats powder, corn starch and water (one-fourth cup water) and mix with spoon to make a paste. Keep it aside.

In a sauce pan, add butter, garlic and saute for a minute. Now add all the vegetables and water. Boil until they are tender.

Now add oats and corn starch paste and keep stirring. Cook until soup is boiled.

Turn off stove and ready to serve with bread sticks.
