Undrallu, lord Ganesh’s favorite, in sweet and savoury flavour.

Steaming should be done carefully since undrallu would become hard if steamed for too long. Kneading the dough is equally important to get the right consistency and shapes. To speed up the preparation, you can use muruku maker instead of hand rolling the dough into balls. The same stuffing and dough is used to make modaks. Rice chapatis, rice noodles etc can be made out of this dough. Kids will love the small soft delicious balls. Rolling the dough into balls can be a fun family activity.

Undrallu / Ammini Kozhukattai – sweet and savory

Ingredients to make dough

  1. Rice flour  –  one cup
  2. Water  –  one cup
  3. Salt  –  a pinch
  4. Ghee  –  one tsp

Ingredients to make savory undrallu

  1. Oil / ghee  –  one tsp
  2. Mustard seeds / avallu  –  half tsp
  3. Jeera seeds / jelakara  –  half tsp
  4. Urad dal / minapapu  –  one tsp
  5. Chana dal / senaga papu  –  one tsp
  6. Chopped green chilli  –  one tsp
  7. Red chilli  –  one
  8. Curry leaves  –  few
  9. Salt  –  to taste

Ingredients to make sweet undrallu

  1. Half cup  –  freshly grated coconut
  2. Jaggery  –  one-fourth cup
  3. Kas kas  –  one tsp
  4. Chopped cashews  –  few
  5. Ghee  –  one tblsp

Procedure to make dough

In a sauce pan, add water, salt and ghee. Bring water to boil

and reduce the flame and slowly add rice flour.

Keep stirring until its mixed.

Turn off heat and remove from gas. Cover it and keep it aside to cool. Transfer into a plate and  knead it until you get dough like consistency. While kneading, smear oil on your palms.

Make small sized balls (pearl size).

Arrange them on greased idly plate and steam for eight mins.  (If steaming in pressure cooker, don’t keep whistle). Turn off heat.

Check if they are steamed correctly – if you touch with your finger it will not stick and looks shiny. After 5 mins remove from cooker.

Procedure to make savoury undrallu

Heat oil in a pan, add mustard seeds, jeera seeds, urad dal, red chili and curry leaves. Fry until mustard seeds start to splutter. Now add green chilli, fry for a min and then add undrallu,

fresh grated coconut and little salt . Mix well. Saute for a min. Ready to serve….

Procedure to make sweet undrallu

Heat a  pan, add ghee, kas kas and cashew. Fry until light brown.

Now add coconut and jaggery,

keep stirring until jaggery melts and the mixture thickens.

It takes about 4-5 mins. Keep aside to cool slightly.

 Heat a pan, add one tsp ghee, undrallu and coconut mixture and saute for a minute  or until its well mixed.

Turnoff heat and ready to serve…
