Zucchini and red bell pepper curry

Ingredients

  1. Chopped zucchini  –  one and one-fourth cup
  2. Chopped red bell pepper  –  three-fourth cup
  3. Chick pea flour / besan  –  Five tsp
  4. Coriander leaves  –  one tblsp
  5. Chopped green chilli  –  three
  6. Ginger  –  half inch (Grated)
  7. Salt  –  to taste
  8. Oil  –  One tblsp
  9. Mustard seeds  –  one-fourth tsp
  10. Jeera seeds  –  one-fourth tsp
  11. Urad daal  –  half tsp
  12. Lemon  –  half tsp
  13. Salt  –  to taste

Procedure

Prepare tadka with oil, mustard seeds, jeera seeds, urad daal. Add grated ginger, chopped green chilli, chopped red bell pepper. Fry for two mintues. Now add Zucchini, chick pea flour and salt. Fry for a minute on medium flame such that Zuccini does not become soft and chick pea flour does not turn brown.

Turn off heat. Add lemon juice, coriander and mix well. Ready to serve with rice and roti……
