White pumpkin chutney


  1. Chopped white pumpkin  –  two cups (peel and remove seeds)
  2. Chopped carrots  –  three tblsp
  3. Chopped tomatoes  –  one-fourth cup
  4. Red chillis  –  four
  5. Coriander leaves  –  four tblsp
  6. Chana daal  –  one tsp
  7. Urad daal  –  one tsp
  8. Jeera seeds  –  one tsp
  9. Small onions  –  half cup (peel and chopped into four parts)
  10. Oil  –  two tblsp
  11. Salt  –  to taste
  12. Lime juice  –  one tsp


In a pan add oil (one tblsp) and onions. Fry until onions are translucent. Transfer in to a bowl. Keep it aside. In the same pan add oil (one tblsp), chana daal, urad daal and jeera seeds. Fry unti daals are light brown. Now add red chillis, pumkin, carrot and tomatos. Mix well and cover it. Cook until vegetables are soft (dont over cook). Turn off heat and add coriander leaves. Cool it, grind them after adding salt. Transfer into the onions bowl. Add lime juice. Mix well. Ready to serve with hot rice…..
