Rotini with red bell pepper and tomato

Ingredients

  1. Whole grain pasta  –  two cups
  2. Boiled black eye beans  –  one-fourth cup
  3. Chopped red bell pepper  –  one cup
  4. Chopped tomato  –   one and half cup
  5. Milk  –  one fourth cup
  6. Sliced green chilli  –  One
  7. Pepper powder  –  one-fourth tsp
  8. Olive oil  –  two tsp
  9. Salt  –  to taste
  10. Sliced  garlic  –  two
  11. Water  –  to boil pasta
  12. Coriander leaves  –  few

Procedure

In a pan add water, oil (one tsp), salt (one-fourth tsp) and pasta. Boil it for 15 to 20 minutes or until pasta is soft. Turn off heat, drain water. In  a food processor, add chopped red bell pepper and tomatos. Make a puree. In another pan, add oil (one tsp), green chilli, garlic, boiled black eye beans, puree (bellpepper and tomato), milk, salt and pepper powder. Mix well. Cover and boil until it becomes a thick sauce. Now add boiled pasta and coriander leaves. Mix well. Ready to eat……..
