Brinjal curry

Brinjal curry


  1. Sliced brinjal  –  two cups
  2. Sliced onions  –  one cup
  3. Coriander leaves  –  four tblsp
  4. Curry leaves  –  three tblsp
  5. Dry coconut powder  –  one tblsp
  6. Green chillis  –  two
  7. Salt  –  to taste
  8. Oil  –  one and half tblsp
  9. Jeera seeds  –  one-fourth tblsp
  10. Mustard seeds  –  one-fourth tblsp
  11. Urad daal  –  one-fourth tblsp
  12. Turmeric powder  –  pinch
  13. Ginger  –  half-inch


In a mixer jar add coriander leaves, curry leaves, dry coconut powder, green chillis and ginger. Powder them. Keep it aside. In a pan prepare tadka with oil, jeera seeds, mustard seeds and urad daal. Now add onions, fry until onions are translucent. Then add brinjal, salt and turmeric powder, cover it and fry until brinjal is soft. Now add powder and mix well. Serve it with phulka or rice.
