Aalu palak curry

Ingredients

  1. Potato  –  two medium (peel and cut into small chunks)
  2. Spinach  –  one big bunch (chop into medimum size)
  3. Garlic  –  two cloves (smash these)
  4. Fresh grated coconut  –  two tblsp
  5. Urad daal  –  one-fourth tblsp
  6. Mustard seeds  –  one-fourth tblsp
  7. Jeera seeds  –  one-fourth tblsp
  8. Red chillli powder  –  one tblsp
  9. Salt  –  to taste
  10. Tomato  –  half of medium size (cut into small pieces)
  11. Oil  –  two tblsp

Procedure

Prepare tadka with urad daal, jeera seeds, mustard seeds and oil. Add garlic, grated coconut, sliced potato, chopped spinash, sliced tomato and water. Cover the pan and let it boil until the vegetables are cooked. Add salt and red chilli powder. Keep the pan covered for 1 more minute. Then garnish with fresh grated coconut and serve.
