Sambhar


Ingredients

  1. Toor dal  –  half cup
  2. Boiled mixed vegetables  –  one cup ( Carrots, beans, Potato, peas etc)
  3. Sambhar powder  –  one tblsp
  4. Salt  –  to taste
  5. Kas kas  –  one tblsp
  6. Tamarind  –   four to five inches (soak in hot water for 10 mins and squeeze)
  7. Red chilli powder  – one-fourth tblsp
  8. Grated fresh/dry coconut  –  2 tblsp
  9. Urad dal  –  one-fourth tblsp
  10. Mustard seeds  –  one-fourth tblsp
  11. Jeera seeds  –  one-fourth tblsp
  12. Curry leaves  –  few
  13. Coriander leaves  –  few
  14. Oil  –  three tblsp
  15. Garlic  –  one clove
  16. Water  – one and half cup or less
  17. Tomato  – one-fourth cup
  18. Jaggery  –  one-fourth tblsp
  19. Turmeric  – pinch
  20. Asafoetida  – pinch

Procedure

Boil toor dal and garlic in pressure cooker. Mash it. Soak kas kas for 15 mins . In a mixer jar add kas kas, sambhar powder, coconut, red chilli powder, salt, water and make a fine paste. In a pan add toor dal, boiled vegetables, tomato, paste, jaggery, tamarind paste, water, turmeric boil it. In another pan prepare tadka with oil, urad dal, mustard seeds, jeera seeds, curry leaves, asafoetida. Add tadka after sambar has boiled. Garnish with coriander leaves.
